Poky's Salsa
This is the best salsa I ever had. Serve it on top of grilled chicken burritos, or simply as a dip for chips. It doesn't "keep" well, so eat it all the day you make it!
Ingredients
4 or 5 ripe (but not soft) chopped plum tomatoes
1 garlic clove, crushed
1 small shallot, finely chopped (don't substitute regular onions, they are too strong)
1 tbsp. chopped fresh cilantro
1 tsp. white vinegar
salt to taste
juice from a half a lime
1 tsp. real maple syrup
Instructions:
Put everything in a bowl and mix gently.
