Grandma Anna's Chicken Soup Recipe
This is my Grandma Anna's recipe for Chicken Soup. It is really good!
Ingredients:
One soup chicken
1 lb. of fresh carrots, peeled and sliced into 1-inch pieces
1 small rutabega (waxed turnip), peeled and cut into 1/2-inch pieces
2 large stalks of celery, cut into 1/2-inch pieces
1 and 1/2 cup of onion, cut into 1-inch pieces
1 tbsp. parsley (dried is OK)
thyme to taste (I use approx. 1 teaspoon)
salt & pepper to taste
1 lb bag of egg noodles, boiled al dente
OR: 2 cups cooked rice
Instructions:
- Make yourself a highball to enjoy while cooking.
- Wash the chicken (get rid of the insides!) and put it in a really big pot.
- Cover the chicken with cold water.
- Add the vegetables and spices to the pot.
- Bring the soup to a boil and then turn down the heat to simmer.
- Simmer the soup for at least two hours. Have another highball, and watch "The Young & The Restless" while you are waiting.
- Prepare the rice or egg noodles and set aside.
- Remove the chicken from the pot and de-bone it. (OK, OK, Grandma never used to do this, but I always do.)
- Shred or slice the chicken into bite-sized pieces and return to the pot.
- Add the egg noodles or rice to the pot.
- You can add an extra cup of water, if you think you need more broth.
- Continue simmering the soup for a few mintes to warm the egg noodles or rice, and the chicken. Serve piping hot with lots of bread and butter.
- Play Bingo or Canasta after dinner.
Serves a lot of people -- probably 8 or more. But if you have a small family, you just eat it several nights in a row!
