Broccoli Salad

This is very quick and easy to make (no cooking), and a nice thing to bring to a party.

Ingredients:
  • 2 heads uncooked broccoli (or equal amount of broccoli crowns)
  • 3/4 cup raisins (I prefer the baking kind -- they are plumper)
  • 1/2 cup red onion, chopped
  • 3 tablespoons sugar
  • 5 tablespoons cider vinegar
  • 1.5 cups good mayonnaise

  • 10 strips of very crispy bacon, rough-chopped
  • 1 cup raw sunflower seeds


  • Optional:
    1 cup grated cheddar cheese (I prefer it without this)
Instructions:
  1. Clean the broccoli and break it into small trees
  2. Gently mix everything except the bacon and sunflower seeds
  3. Gently add the bacon and sunflower seeds a few minutes before serving
  4. Tastes best served very chilled.
Notes:

This salad can be made the day before, and tastes even better the next day. If the red onion is very sharp, use less, you don't want it to take over.
